That's one of those grammar rules that really is obsolete, in my personal opinion. It's the difference between saying "five items or less" or "five items or fewer"...it really doesn't matter; because ultimately the point of any given language, as a canonized means of communication, is to enable the conveyance of information whatever.
"me and you" or "you and I" convey the same information. "You" being indicative of a secondary party; and "me" referring obviously to me, myself and I. There really is no rational reason. At this point in human speech, "me and you" is just sonically more satisfying and relatable than I, which sounds, frankly, more declarative. This what I like about English, there are very few "laws". There're just loose, fluid guidelines.
